You can also go ahead and prepare a batch of&nbsp;<a href=\"https:\/\/sallysbakingaddiction.com\/pumpkin-pie-spice\/\">homemade pumpkin pie spice<\/a>, because you WILL be making these on repeat.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">The Secrets to Chewy Pumpkin Oatmeal Cookies<\/h2>\n\n\n\n<p>Pumpkin is a really moist ingredient which makes it useful in cakes, pumpkin muffins, and quick breads. But it poses a texture problem when we\u2019re trying to make dense and chewy oatmeal cookies.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/sallysbakingaddiction.com\/wp-content\/uploads\/2016\/09\/brown-butter-pumpkin-cookies-3.jpg\" alt=\"blotted pumpkin with a paper towel in a glass bowl\" class=\"wp-image-39720\"\/><\/figure>\n\n\n\n<p>Here\u2019s what I\u2019ve learned:<\/p>\n\n\n\n<p><strong>Blot the pumpkin.&nbsp;<\/strong>More moisture = cakier cookies. To prevent overly cakey cookies, blot some of the moisture out of the pumpkin. We know it sounds odd, but gently soaking liquid out of the pumpkin puree with a paper towel is a trick that works. Take a look at the difference below.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Left:<\/strong>\u00a0Blotted the pumpkin\u2014the cookie is denser and chewier.<\/li>\n\n\n\n<li><strong>Right:<\/strong>\u00a0Did not blot the pumpkin\u2014the cookie is cakey.<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/sallysbakingaddiction.com\/wp-content\/uploads\/2016\/09\/brown-butter-pumpkin-cookies-5.jpg\" alt=\"collage of 2 images showing the difference in pumpkin cookies when blotting the pumpkin\" class=\"wp-image-39721\"\/><\/figure>\n\n\n\n<p><strong>Use only an egg yolk.&nbsp;<\/strong>Pumpkin acts like an egg in cookie dough and this is something I learned when testing&nbsp;<a href=\"https:\/\/sallysbakingaddiction.com\/pumpkin-chocolate-chip-cookies\/\">pumpkin chocolate chip cookies<\/a>. Testing today\u2019s pumpkin oatmeal cookies, however, proved that an egg\u2014or at least part of an egg\u2014is necessary. The cookies were a little dry and crumbly without it because of the oats in the dough. Use just 1 large egg yolk in the dough because that little extra bit of fat makes a difference.<\/p>\n\n\n\n<figure class=\"wp-block-embed\"><div class=\"wp-block-embed__wrapper\">\nhttps:\/\/c93802116f146f1af0a0446777987664.safeframe.googlesyndication.com\/safeframe\/1-0-40\/html\/container.html\n<\/div><\/figure>\n\n\n\n<p><strong>Use a cookie scoop.&nbsp;<\/strong>I like to use a&nbsp;<a href=\"http:\/\/amzn.to\/2xSm612\" target=\"_blank\" rel=\"noreferrer noopener\">medium cookie scoop<\/a>&nbsp;for this cookie dough. Why? This dough is a cross between cookie dough and cake batter and a cookie scoop makes things a little more manageable. Once you scoop the dough, slightly flatten the tops of the dough mounds. The cookies don\u2019t expand much but flattening them first encourages spreading, which helps seal in that chewy texture. When you\u2019re finished browning the butter, set aside 2 ounces for the glaze topping. Use the rest in the cookie dough.<\/li>\n\n\n\n<li><strong>Whisk dry ingredients together.<\/strong>\u00a0This includes whole oats, all-purpose flour, baking soda, salt, ground cinnamon, and pumpkin pie spice.<\/li>\n\n\n\n<li><strong>Whisk the brown butter<\/strong>\u00a0you need for the dough with granulated sugar and brown sugar. Then whisk in the egg yolk + vanilla extract.\u00a0<\/li>\n\n\n\n<li><strong>Blot the pumpkin,\u00a0<\/strong>then whisk it into the wet ingredients. (By the way, here\u2019s a list of\u00a0<a href=\"https:\/\/sallysbakingaddiction.com\/leftover-pumpkin-puree-recipes\/\">recipes to make with leftover pumpkin puree<\/a>!)<\/li>\n\n\n\n<li><strong>Mix dry ingredients into the wet ingredients.<\/strong>\u00a0Combine to form a thick and sticky dough.<\/li>\n\n\n\n<li><strong>Scoop &amp; flatten.\u00a0<\/strong>As noted above, scoop cookie dough onto baking sheets using a medium cookie scoop. Slightly flatten each cookie dough ball before baking.<\/li>\n\n\n\n<li><strong>Bake<\/strong>\u00a0until cookies are lightly browned and set on the edges.<\/li>\n\n\n\n<li><strong>For the icing,\u00a0<\/strong>whisk the reserved brown butter and the remaining icing ingredients together until smooth.
